Avunwa nini Emagrabisi Eliwayini?

Shukela Ungakanani

Kunendlela yakhona yekuhlola shukela kumagrabisi, ibitwa ngekutsi yi "refractometer” noma “ballingmeter” kuhlolwa ngema (oB) – 1.0gm. emagrabisi ekwenta liwaayini lelimhlophe angavunwa ku+/- 20oB kepha emagrabisi labovu ajwayelwe kuvunwa ku 23 na 25oB. Shukela uyakhuphuka noma ehle, kuya ngesimo selitulu sakuleyo ndzawo.

Acidity

Emagrabisini bu"acidity” buyehla nangabe shukela akhuphuka. Wonkhe emawayini kufanele abe ne"acid” lelinganako. Uma kungasiko njalo bunandzi beliwayini buyalimala. Bu’acidity’ beliwayini lobubalulekile I’tartaric acid’ kanye ne’malic acid’. ‘Tartaric acid’ ngiyo lemcoka ngoba ifaka bunandzi futsi yenta liwayini lingasheshi limosheke. ‘Malic acid’ yona yenta emagrebisi adleke kahle.

pH

Umsebenti we pH kwenta siciniseko kutsi emagrabisi akhula kahle. Uma ipH iyincane loko kusho kutsi I’acidity isetulu. Bunandzi, nakuhlala sikhatsi kweliwayini lelibovu kuyalimala uma pH ingetulu kuka 3,5-3,6. Leli lingachazwa njengeliwayini lelingekho ezingeni.

Umbala

Kuvela kwembala emagrabisini labovu kucala ngaDecember/January. Letinyenti tihlahla temagrabisi labovu, ngulesikhumba lesiba bovu. Lombala waleliwayini ucamuka kulesikhumba hhayi lejusi. Lejusi esikhatsini lesinyenti yona ite umbala. Umbala ungakhona kutfolakala ngekuyisa emagrabisi ayohlolwa. Kepha lenye indlela lelula yekubona umbala, kupatjata ligrebishi uhambise lesikhumba wentele kubona kutsi umbala utovela yini. Emagrabisi lamhlophe, wona umbala wakhona ubutfubi noma uluhlata.

Bunandzi

Tinhlobo tebunandzi bemagrabisi latfolakalako, timbili: emagrabisi lamunandzi ngekwendalo phindze emagrabisi lamunandzi lentiwe. Emagrabisi endalo enteka ngemagrabisi labitwa ngekutsi ‘muscat flavour’ lesuka ku ‘hanepoot’ kanye ne ‘muscadel grapes’. Emagrabisi lawentiwe wona entiwa nge ‘yeast’ kepha ngeke uyive nawudla lamagrabisi.
